Morning Glory Muffins!

Here is another treasure from my own recipes! It does include coconut oil and coconut palm sugar.

You ask why I have said coconut palm sugar? Well I will tell you. Coconut palm sugar is low sugar on the glycemic index with a value of 35. What does that mean? It means that it will not spike your blood sugar nearly as much as something that has a value of 50 on the Glycemic Index. Coconut palm sugar also has more nutrients in it then normal table sugar.

It has a “molassesy” flavor and can be subsitituted cup for cup into recipes.

here is my own Morning Glory Muffins:

Hi Elaine, Here is the recipe that we were talking about in the store today!

1 1/3 cups of whole wheat flour 
3/4 cup of coconut palm sugar
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/4 teaspoon sea salt
2 eggs
2/3 cup coconut oil (to make it easier to mix warm the coconut oil easier to measure and bake with) 
1 teaspoon vanilla
1 apple cored and diced
1/2 cup grated carrots
1/2 cup raisins 
1/2 walnuts
1/4 cup of unsweetened coconut flakes(plus 2 tablespoons for top) 
If I don’t have raisins on hand I substitute for chocolate chips… not as good for you but makes them takes just that much sweeter!

Preheat the oven to 350°F. In a large bowl, mix together flour, sugar, baking soda, cinnamon and salt

In a separate bowl, whisk together eggs, oil and vanilla, then add to flour mixture and stir just until combined. Add apples, raisins, carrots, walnuts and 1/4 cup of the coconut and stir gently until well combined.

Spoon batter into 16 paper-lined muffin tins, filling each about 2/3 full. Top evenly with remaining 2 tablespoons coconut and bake for 25 to 30 minutes, or until cooked through.

This recipe is very versatile in the sense that I do not do exact measurements. I guess at the apple and carrots as well as the chocolate chips if I use them. It is a fun way to add those fruits and veggies to otherwise picky children. You can’t taste the carrot and the apple just makes it that much sweeter.
Keep note that you should limit your intake of coconut palm sugar just like regular table sugar because all sugar is sugar to the body and will all be converted to glucose to be used as energy. It all depends on the amount of fructose is in a sugar because the more fructose the less amount of energy can be transformed. Coconut Palm Sugar does not have a high amount of fructose, so is better than the normal table sugar.
Also do not be confused be palm sugar it is not the same as coconut palm sugar.
I hope you enjoy these lovely morning glory muffins. Every time I make them they are gone in a day or two but they are great to freeze if your family does not eat them as quickly.

Coo Coo For Coconuts!

Coconut oil! Coconut OIl! COCONUT OIL!!!!!!!!

This week we are all about coconut oil if you couldn’t tell. Why? Because it is so good for your body both internally and externally. It can come in several different ways such as virgin, extra-virgin, and RBD coconut oil, however, in the coconut oil work there is no difference between the virgin and extra-virgin title.  The RBD does stand for Refined, Bleached, and Deodorized but do not be alarmed by the BLEACHED term! It is a common process in most coconut oils and means it is just pressed through a natural clay to get all impurities out of the oil. It is steamed to rid the odor of the coconut oil. This is all the refined means and is still just as healthy for you as the virgin and extra-virgin.

Now pick the type of coconut oil you would like to use. All of them come in a solid state form because the melting point of this oils is 78 degrees Fahrenheit and will turn to a liquid. DO NOT be alarmed by this either it is still good and has a long shelf life. If you do not like the smell or taste of coconut oil RBD is the best for you. Coconut oil will only enhance the natural flavor of your food that you cook because it has little to no taste.

Internally coconut oil is great because it aids in digestion, improves bone health, prevents diseases affecting the kidneys and liver, and improves the immune system. This oil is also rich in Lauric acid to help maintain healthy blood sugar and cholesterol levels. This oil is not recommended for people with high cholesterol because it does not lower it only maintains.

How about hair health? Coconut oil prevents protein loss in damaged and undamaged hair, conditions and protects from lice, It also helps rid of dandruff and is great for styling hair. Coconut oil can also help prevent baldness because of the prevention of protein loss benefits and nourishes dry hair and minimizes split ends. If you have a problems with boils it can also provide some relief of problems with those.

An egg and coconut oil mask is perfect if you have an hour empty about once a week before you shower. Simply take 1 cup of coconut oil and melt it in the microwave, then add an egg (make sure the oil is not too hot or else it will cook the egg) and lather the mixture into your hair and let set for an hour. then rinse out of you hair. I personally only conditioned my hair instead of washing it but you can wash it if you wish. towel dry and style as usual. It makes my hair shiner and softer!

You want to prevent wrinkles in you later age? Well Coconut oil has posed to be a great preventative for those along with a more youthful look. it is a great skin softener, makeup remover, relieves chapped lips, and moisturizes skin. If you have rough feet putting some coconut oil on them can help to sooth the skin. It not only repairs skin but coconut oil can also help give a natural glow to skin to make it more youthful.

How about a cornbread recipe that has coconut oil in it! This original recipe is a favorite in our house and is always gone in a no time!

Mattie’s Sweet Cornbread:

1 cup Flour

1 cup Sugar

1 cup Cornmeal

1 Tbls. Baking Powder

1/2 tsp. Real Salt

1-1/8 cup Sweet Cream Buttermilk Solids

2 eggs beaten

1/3 cup coconut oil 

3 Tbls. butter melted

Preheat oven to 350 degree Fahrenheit, i usually put my coconut oil and butter in the oven while it is preheating to melt both.

Combine flour, sugar, cornmeal, baking powder, and salt in a medium bowl.

Combine buttermilk solids, eggs, coconut oil, and butter into a large bowl and mix well.

Add Dry flour mixture to liquid mixture and stir until well blended.

Pour into a well greased 8 inch square dish and baked for 38 minutes. (or until toothpick comes out clean.

Sprinkle sugar on top immediately after taking it out of the oven and let cool.
